De\u00a0Ress Family\u00a0is een oude gevestigde familie in Had. Generaties lang was de Ress familie slager. Tot vandaag de dag bestaat de “Slager Ress\u201d. Echter de familie richte zich op andere takken en ging over in de wijnmakerij. In 1947 bezit de wijnmakerij bijna drie hectare wijngaarden. Einde van de 40-jarige nam de Balthasar Ress KG, meer en meer wijngaard land over om uteindelijk in 1950 het Weingut Wilhelm Hess over te nemen. In 1963 werd Stefan Ress, de oudste zoon van Paul Ress, commanditaire vennoot in het bedrijf. Hoewel hij nog erg jong was gaf zijn vader hem veel vrijheid en zo slaagde hij erin om 1,2 hectare van de\u00a0wereldberoemde Hattenheimer Nussbrunnen\u00a0tijdens \u00a0een bijna spectaculaire veiling in 1968 te kopen. Na de dood van Paul Ress in het begin van de jaren ’80, werd alles wat eigendom was verdeeld onder de broers en zussen van Stefan Ress. \u00a0Echter de wijnmakerij en de handelsmaatschappij bleef in het bezit van Stefan Ress zelf. Het landgoed groeide gestaag en werd in 1989 opgenomen in de VDP.
